RESTING COFFEES
At GA.PE, we believe time is one of coffee’s most essential ingredients.
After roasting, we let each batch rest and settle — it’s how the beans find their balance before showing their full character in the cup.
We usually start brewing around 2–3 weeks after roast, but the coffee truly comes alive around weeks 4–5. Some batches keep evolving beautifully up to 60 days, and can still taste vibrant and complex for as long as 3 months.
